Which brand of ricotta cheese is the best?
Q. I forgot which brand I decided was the best. A lot of the brands do not have a smooth creamy texture - it is more like little pieces of grits. I shop at Fry's, Safeway and Sam's so I know it came from one of these stores. It may have been a Kroger brand. I just do not remember. I will be making cannolis and want the ricotta to be smooth and creamy. Thanks.

A. As a former chef they are made the same way, it depends on the milk fat of the original milk used before the vinegar that curdles the milk is added, marscapone is 35-40% butterfat, for cannolis I use regular full fat, not light ricotta and half a brick of regular cream cheese. I soften it and mix in the ricotta, then add my soaked rum raisins, peel, chocolate shavings, flavourings and I add a non dairy whipped cream, it does not weep and soften the cannoli shells, I also find if you doing this for dinner or a gathering make up the filling put it in the frig to chill and fill the cannoli shells at the last moment, and if you want to dip some in chocolate this will allow it to set.
